Banana-Cashew Sandwich

I got my undergraduate degree from Rhodes College, in Memphis Tennessee. I managed to spend my entire time in Memphis without darkening the door of Graceland, but there is one aspect of Elvis' life that I appreciate. It's said that one of his favorite foods was peanut-butter banana sandwiches.

During my senior year, my roomate Tim and I lived close to a health-food/new-age shop that had a small deli. I ate there at least once a week, and pretty frequently I dined on a peanut butter and banana sandwich, with honey and currants. Man, that was good eating, if a little messy.

So now, from time to time, I reproduce that sandwich with a few modifications. First, I slice the banana on an angle, and into very thin slices. Second, I omit the currants. Third, I like to use cashew butter in place of peanut.

Here's how it works. And if you're from north of the Mason-Dixon line, or west of Texas, you'll just have to trust me.

Take two slices of good, hearty bread. I recommend a whole-grain bread with seeds and nuts. Slather on a good bit of cashew butter (or peanut, or almond, or macadamia, whatever - but it's a lot better with "natural" style nut-butter). Lay on a good number of thin slices of ripe banana, then drizzle with honey to taste. Slap the second slice of bread on, and enjoy.

You may, or may not, begin to refer to bananas as "nanners" once you eat this sandwich. I take no responsibility for that. I also take no responsibility if you start shooting your television, taking amphetemines, and die on the toilet. If, however, this sandwich recipe leads you to become a multi-million record selling superstar, you can just call me the Colonel.
